Ristorante Baita Ermitage is located in Courmayeur, a city long regarded as the culinary showcase of the Val d'Aosta. With its proximity to both Switzerland and France, a decidedly independent culinary spirit infuses this region's cuisine. In keeping with that spirit, Baita Ermitage uses many French and Alpine ingredients to create flavorful, down home dishes designed for maximum sustenance in the mountainous climate as well as elegant, sophisticated creations that delight as well as nourish. One delicacy not to be missed is zuppa di pane, a slow-baked bread and cheese soup made with bread, Fontina cheese, butter, and chicken stock. Zuppa di Valpelline raises the bar on traditional cabbage soup with the addition of fatty bacon and rosemary. Other Baita Ermitage dishes include cheese polenta, beef stew, and rabbit stew made with carrots, celery, onions, and spices.Variations of this dish often incorporate pheasant or marmot, which is marinated for two days in white wine to tenderize and flavor the meat. We stumbled upon Baita Ermitage one day while exploring the town. Although the small, charming dining room was full, outside the restaurant there are ample lounge chairs so we could dine in the midst of the fresh snow while enjoying both the exquisite cuisine and Alpine view.There, we had one of the best meals of our trip.The polenta especially was fantastic, prompting everyone in our family to order seconds, its rich flavor warming our bodies and delighting our taste buds as we enjoyed our meal, contentedly bundled up in our hats and coats. Whether for lunch or dinner, a meal at Ristorante Baita Ermitage is an experience in one of the world's great culinary styles - at once richly satisfying and yet with flavors delicately balanced to compare with the best cooking anywhere in Italy.
